Glossitis describes a tongue that is smooth and often, erythematous, hence "beefy".

The appearance is due to atrophy of the papillae, usually a result of nutritional deficiency to which the tongue is sensitive because of the rapid turnover of mucosal cells.

In later stages, there may be shallow ulceration.
