Sucrose is a disaccharide sugar composed of the monosaccharides glucose and fructose. It is found in cane sugar and sugar beet. Sucrase is the gastrointestinal enzyme which digests sucrose.
Of all the natural carbohydrates, it is the sweetest.
A diet rich in sucrose is associated with a high incidence of dental caries and heart disease.
