Salmonellosis - food poisoning in eggs
Eggs infected with Salmonella are derived from infected hens. Infection reaches the egg by either a transovarian route or through faecal contamination via shell-pores.
Transovarian infection has become common in hens due to host adaptation of S. enteritidis.
To kill the salmonellae, infected eggs should be boiled for at least 5 minutes.
